Twist on a classic! This beautiful & versatile banana split is always a winner! You can separate out the vanilla layer into three parts so that the fig and berry layers don’t have the same ingredients- though i find the berries are overpowering enough even with fig in! Figs are high in soluble fibre and potassium, and thus promote weigh loss.

Ingredients

4 frozen bananas

1 ripe raw banana

1/2-1 cup fresh berries of cherries, plus some to garnish

A handfull fresh figs, plus extra for garnish

1 tsp vanilla extract or 1 vanilla bean

Notes

Strawberries, blueberries or blackberries are a great option for this split! You can add cacao into the vanilla scoop for a Neapolitan split!

Instructions

Slice banana and place in a dish. First, make the vanilla scoop – blend all bananas with the vanilla, add a little water or almond milk if needed to incorporate. Take out a scoop & place on the banana. Then add in the figs for the second layer, taking out another scoop. Then blend the final pink layer, I used cherries in this instance but any fruit will do! Top with some sliced figs & cherries!

Serve & Eat Immediately – this melts quickly.
