This simple soup is a comforting treat. Tender sweet butternut makes this a delight to beautifully serve up for an easy lunch or dinner.
Total Time: ~35 minutes
1 large onion
4.5 low sodium vegetable stock
5 cups choped butternut squash
1/2 Tb miso paste
Papper and paprika, to taste
You can also roast the butternut beforehand and blend with the sautéed onion for a more caramelised taste!
Butternut is a high-water containing starch so eases digestion!
Saute onion in water in a large saucepan. Once slightly browned, add vegetable stock, squash and spices. Cook for about 20 min, till the squash is tender.
Add miso and blend in a food processer or blender, in batches, and serve!
