Bright yellow zucchini ribbons stand out in this fresh, simple summer salad. Topped with sweet cherry tomatoes, brazil nuts & a light nut dressing, this will leave you feeling energised!

 Serves 1-2  /  Total time: 15-20min



For the Salad:

1 large or 2 small zucchinis (green or yellow)

1 Punnet cherry tomatoes, sliced in half or left whole

Handful brazil nuts, roughly chopped

Chives, to garnish

For the dressing:

5 brazil nuts

1 garlic clove

1/2 c water

Splash of lemon



1. Make the dressing by blending all ingredients in a blender, food processor or magic bullet. 

2. Next, using a mandoline, or thin knife, slice the zucchini into ribbons. 

3. Combine all the salad ingredients, and mix through the dressing. 

4. Season and serve!


If you have time, pre-soaking the nuts will make the dressing creamier! It’s worth it to keep a storage of soaked and dried nuts for spontaneous salads, especially if your don’t own a high-speed blender. 

A spiralizer is ideal for obtaining pasta like noodles; otherwise, just use a peeler to get thin slices. 

Brazil nuts are high in Selenium, which is important in thyroid hormone synthesis and in balancing metabolism and body weight. Researchers in New Zealand found that eating one brazil nut a day is enough to acquire the recommended daily amount for this mineral.1
